苹果酸的生理功能及在食品中的应用研究进展

摘 要:苹果酸是一种安全、无毒、无害的天然活性物质。介绍了苹果酸的生理功能,综述了苹果酸在食品领域中的应用研究进展。主要从苹果酸淀粉酯、pH调节剂、果蔬防腐剂、花青苷含量促进剂、药食两用作物提取溶剂、钙营养添加剂等方面报道了苹果酸的应用实例,并展望了其发展前景,旨在为今后食品工业中苹果酸高附加值产品的开发与设计提供参考。

Research Progress on Physiological Function of Malic Acid and Its Application in Food Industry

Abstract:Malic acid is a safe, non-toxic and harmless natural active substance. The physiological functions of malic acid are introduced, and the application and research progress of malic acid in food field are reviewed. This paper mainly reports the novel application examples of malic acid from the aspects of starch ester of malic acid, pH regulator, fruit and vegetable preservative, anthocyanin content accelerator, extraction solvent for medicinal and edible crops, calcium nutritional additive and so on, and looks forward to its development prospect. The purpose is to provide reference for the development and design of malic acid high value-added products in food industry in the future.
