红外光谱技术在食用油检测领域应用进展

摘 要:红外光谱技术具有快速、准确、分析成本较低、绿色环保等优点,已广泛应用于食用油的品质检测。综述了近5年红外光谱技术在食用油的理化指标、掺伪掺假、油料作物的品质以及煎炸油的成分变化等检测领域的研究,为进一步深化食用油品质检测、保障消费者权益提供理论依据。

Abstract:Infrared spectroscopy has the advantages of fast, accurate, low analysis cost, green environmental protection, and is widely used in the quality detection of edible oil in recent years. The research of infrared spectroscopy technology in the field of physical and chemical indicators, adulteration, quality of oil crops and fried oil in the past five years is reviewed, which provides a theoretical basis for further deepening the detection of the quality of edible oil and ensuring the physical and mental health of consumers.
